The first step is the traditional bourbon mash bill for Yellowstone Toasted, then stave finishing. To achieve the required taste profile, Beam, a seventh-generation master distiller, hand-selected a blend of five distinct staves: high toast, American oak double toast, vanilla, Brickhouse, and spice rack.
The resultant whiskey has a medium body with notes of walnut, toffee, black tea, and white pepper; a crisp finish accentuated by cocoa, tobacco, and oak; and an aroma of toasted caramel and vanilla with traces of fall spices and cinnamon.
“Honoring more than 150 years of Bourbon heritage while still keeping things fresh and exciting is what the Yellowstone Special Finishes Collection does well,” Beam added. “In 2016, 2017, and 2018, I started experimenting with toasted barrels with the Yellowstone Limited Edition releases. More recently, I did the same with the distillery-only Yellowstone Toasted Single Barrel. To get the ideal taste profile for Yellowstone Toasted, my knowledge helped determine which stave flavors to utilize and at what ratio.
